Refreshing Pimms Cup Cocktail on a Bar

Before we get into this refreshing Summer cocktail, maybe an explanation as to what exactly Pimm’s is and isn’t. It is not Aperol, which is very popular in the summer also. Aperol is more fruity, Pimm’s is more herbal.

Pimm’s is a gin-based digestif created in the 1800s by a London bar owner named James Pimm and is a favorite at Wimbledon.

Now, here’s how to cool off with a Pimm’s Cup:

Ingredients

  • 2 ounces Pimm’s No. 1
  • 1/2 ounce lemon juice, freshly squeezed
  • Ginger ale, to top
  • Garnish: cucumber slice
  • Garnish: mint sprig
  • Garnish: strawberry

Steps

  1. Add Pimm’s No. 1 and lemon juice into a highball glass over ice, add cucumber slice and then top with ginger ale and stir briefly to combine.

  2. Garnish with mint sprig and skewered strawberry.

  3. ENJOY!
